New Delhi: ‘Rabri’ is such a sweet dish, which is delicious as well as very beneficial for health. You can taste it at home. Rabri with saffron, dry fruits will fill a different sweetness in your mouth. So let’s know about the recipe for making Rabri-

Milk – 3 liters

Almonds – 12-13

Pistachios – 12-13

Cardamom powder – 1 tsp

Saffron – 1 pinch

Sugar – as per taste

• To make Rabdi, first pour milk in a pan and keep it on medium flame to heat.
• When the milk starts boiling, reduce the flame of the gas. Keep stirring the milk by running the ladle in between.
• When a layer of cream starts appearing in the milk, apply it on the edge with the help of a ladle. In the same way, when cream starts coming in the milk, with the help of a ladle, keep applying it on the edge.
• Keep cooking until the milk is reduced to half. As per the time, add sugar to it.
• Mix sugar in milk. Then add cardamom powder, almonds, pistachios and saffron to the milk. Then remove the cream on the edge of the pan and add it to the milk and mix it.
• Now cook the rabri for 2-3 minutes and turn off the gas after the fixed time. After turning off the gas, keep the rabri to cool down. After it cools down, keep the rabri in the fridge and cool it down.
• After the fixed time, put it in a serving bowl and garnish it with almonds and serve it.
